Easy Summer Dessert for Two – Fresh Peach Mini Cobblers

As summer reaches its zenith, there’s a special kind of delight in savoring the flavors of the season. One such treat that embodies the essence of summer is the humble yet decadent mini peach cobbler. Imagine the sweetness of ripe peaches mingling with buttery, crisp crusts in individual servings that promise a burst of flavor in every bite. Growing up in North Carolina, my mom always had the ingredients to make what we called dump cobbler. These cobblers consisted of three ingredients – a stick of butter, a can of any pie filling, and a box of yellow cake mix. Making it was simple – grease the bottom of a 9×9 pan, add the pie filling, top with the dry cake mix, slice the butter and add to the top, never mixing the ingredients. These dump cobblers were affordable, and served about six people, thanks to their richness. 

After moving out, I dearly missed this simple dessert. I decided to pick up a box of cake mix to have on hand with some fresh (or frozen!) fruit to be able to make a mini version anytime I wanted. When making the filling from fresh or frozen fruit, I generally opt to use a spice blend like pumpkin pie spice. The different spices add a depth to the dessert you wouldn’t get from just cinnamon alone. Of course, if you only have cinnamon on hand, it will work perfectly, too! And while not everyone has yellow cake mix on hand (but you just may after trying these cobblers!), you can substitute the mix with a tablespoon of flour, and a dash of sugar. If you want to add more texture, add a half tablespoon of old fashioned oats! 

One of the charms of mini peach cobblers lies in their versatility. They can be enjoyed warm or at room temperature, with a dollop of vanilla ice cream melting into the fruit and melding with the crust, or simply on their own. Their individual portions make them ideal for gatherings, allowing guests to indulge without the need for serving utensils or extra fuss. Or, they can be the perfect solution when you need a sweet treat – you can use almost any fruit, they’re quick to make, and they’re a great portion size! One box of cake mix usually lasts me quite a while, making these a cost effective dessert option.

For those who enjoy experimenting in the kitchen, mini peach cobblers also present an opportunity to get creative. Consider adding a hint of almond extract to the filling for a nuanced twist, or topping each cobbler with a sprinkle of toasted pecans for added crunch. The possibilities are as endless as your imagination allows. I especially love making these mini cobblers when I have fruit on the verge of going bad – cherry, blueberry, or strawberry all makes great fillings, too!

Fresh Mini Peach Cobblers – Summer Dessert for Two

With as few as five ingredients, these fresh peach mini cobblers are perfect for any summer night. Ready to eat in less than 30 minutes, these are a perfect weeknight dessert.

Equipment

  • 2 Ramekins

Ingredients
  

  • 2 tbsp Salted butter each tablespoon cut in half. You should have 4 pieces of ½ tbsp of butter.
  • 2 small Yellow peaches diced into bite size pieces
  • 2 tbsp Light brown sugar packed
  • 1 tsp Pumpkin pie spice can use cinnamon if needed
  • 2 tbsp Yellow cake mix see notes if unavailable

Instructions
 

  • Preheat oven to 350. Place 1/2 tbsp of salted butter in each ramekin. Place in oven to melt butter.
  • Dice peaches into bite size pieces.  In a small bowl, add peaches, brown sugar, and pumpkin pie spice. Mix until combined. 
  • Once butter has melted in ramekins, add half the peach filling to each ramekin
  • Scoop one tablespoon of yellow cake mix on top of each ramekin of peach filling. Do not mix. 
  • Add the other half of your remaining tablespoon of butter on top of each cobbler. Do not mix.
  • Place in oven on lowest rack for 20 minutes, or until golden and bubbly.

Notes

If you do not have yellow cake mix, you can substitute with 1 tablespoon of flour mixed with 1 teaspoon of sugar. 
If you want to add more texture, add a half tablespoon of old fashioned oats.
