Fresh Mini Peach Cobblers - Summer Dessert for Two

With as few as five ingredients, these fresh peach mini cobblers are perfect for any summer night. Ready to eat in less than 30 minutes, these are a perfect weeknight dessert.

Equipment

  • 2 Ramekins

Ingredients
  

  • 2 tbsp Salted butter each tablespoon cut in half. You should have 4 pieces of ½ tbsp of butter.
  • 2 small Yellow peaches diced into bite size pieces
  • 2 tbsp Light brown sugar packed
  • 1 tsp Pumpkin pie spice can use cinnamon if needed
  • 2 tbsp Yellow cake mix see notes if unavailable

Instructions
 

  • Preheat oven to 350. Place 1/2 tbsp of salted butter in each ramekin. Place in oven to melt butter.
  • Dice peaches into bite size pieces.  In a small bowl, add peaches, brown sugar, and pumpkin pie spice. Mix until combined. 
  • Once butter has melted in ramekins, add half the peach filling to each ramekin
  • Scoop one tablespoon of yellow cake mix on top of each ramekin of peach filling. Do not mix. 
  • Add the other half of your remaining tablespoon of butter on top of each cobbler. Do not mix.
  • Place in oven on lowest rack for 20 minutes, or until golden and bubbly.

Notes

If you do not have yellow cake mix, you can substitute with 1 tablespoon of flour mixed with 1 teaspoon of sugar. 
If you want to add more texture, add a half tablespoon of old fashioned oats.
